No shortcuts please- don't be tempted to nuke the potatoes in the microwave. You can make this recipe a few days in advance and warm up in the microwave or oven.
Prick the sweet potatoes with a fork a few times. Place on the middle rack in the oven. Place a foil-lined baking sheet on the bottom rack to collect any syrup from the potatoes for easy clean up. Bake at 425 for 45- 90 minutes depending on size.
Potatoes are done when you can easily push into the flesh of the potatoes with your finger. Turn off oven and allow the potatoes to continue to cook with residual heat for about 30 minutes.
Remove the potatoes from oven. Once cool enough to touch and handle, peel the skin from potatoes or use a spoon to scoop out the flesh.
