Sweet Potato-Puree - Leah Sarago Recipe
Instructions
  1. Prick the sweet potatoes with a fork a few times. Place on the middle rack in the oven. Place a foil-lined baking sheet on the bottom rack to collect any syrup from the potatoes for easy clean up. Bake at 425 for 45- 90 minutes depending on size.
  2. Potatoes are done when you can easily push into the flesh of the potatoes with your finger. Turn off oven and allow the potatoes to continue to cook with residual heat for about 30 minutes.
  3. Remove the potatoes from oven. Once cool enough to touch and handle, peel the skin from potatoes or use a spoon to scoop out the flesh. Place potatoes in a large bowl and use a hand held immersion blender to puree the potatoes until smooth or creamy. You can also place in a high quality blender or food processor. Add a pinch of sea salt to taste.
  4. You can serve immediately if potatoes are still warm. Place pureed potatoes in a baking dish and warm in the oven until ready to serve. This can also be reheated in the microwave. This is a great make ahead dish! Keep in fridge for up to 3 days. Reheat in oven at 350 degrees for about 20-30 minutes.
Recipe Notes
  • Your pureed sweet potatoes will vary in sweetness.  Look for small to medium sweet potatoes, which are sweet and creamy. (The larger ones tend to be starchier.) The skin should be firm, smooth, and even-toned. Choose darker skinned variety for moisture and sweetness.
